Zahn Otto has had 15 years of experience as a clinical dietician in private practice. Besides this work, she explored both professionally and personally many holistic approaches to apply dietetic therapy in eating disorder recovery. She believes passionately in maintaining “joie de vivre” as part of the food experience and aims to integrate medical and scientific principles, practical skills, cultural appreciation and emotional intelligence into all her work.
Sensual Eating
Crunchy Cleansing Salad:
(serves 4)
- 1 butter or baby lettuce
- 1 cup sliced or cubed cucumber
- ½ cup chopped parsley
- 1 cup chopped celery
- 2 cups cubed avocado
- ½ cup diced green pepper
- 1 cup grated raw beetroot
- 4 tbspn raw sesame, sunflower, pumpkin seeds, chopped almonds
- freshly squeezed lemon juice and black pepper
